Shortbread is a classic recipe and is made beautifully by Jamie Oliver. Buttery, crumbly and full of goodness, this shortbread recipe is just amazing!
This recipe is really simple and easy to make. I often make these for school, but they are also a delicious treat to dunk in a nice cup of tea. I usually cut the finished shortbread into squares, however you can also roll the dough out onto a floured surface and use cookie cutters for some fun shapes.

Ingredients
- 250g unsalted butter, softened
- 125g caster sugar
- 250g plain flour
- 125g riceflour
Directions
Preheat oven to 150°C. Grease and line a square or rectangular baking tin.
Cream the butter and sugar together until pale, light and fluffy. Sift the flour and riceflour over the mix. Combine lightly with a wooden spoon and then your hands until you have a smooth dough.
Transfer dough to a floured surface and kneed until it comes together. Press dough into tin, poking into the corners with a fork. Cook for 50 minutes or until lightly golden.
Allow shortbread to cool before cutting into pieces.
