I’m not sure who first made this recipe as it was shared to me by a friend, but thanks to who ever came up with this classic xx
This recipe is delicious. The Weet-Bix makes a crunchy texture which I love. The icing kind of melts on your tongue which is amazing. It’s a really fast recipe to make, something to whip up for school.
Ingredients
- 6 Weet-Bix, crushed
- 1 cup desiccated coconut
- 1 cup brown sugar
- 1 cup self-raising flour, sifted
- 2 tablespoons cocoa
- 250g unsalted butter, melted
Chocolate Icing
- 1 cup icing sugar
- 2 tablespoons cocoa
- 2 tablespoons water
Method
Preheat oven to 170°c. Grease and line a slice tin.
In a medium bowl, mix together the crushed Weet-bix, coconut, brown sugar, flour and cocoa. Add the melted butter and stir to combine.
Press into prepared tin and bake for 15 minutes. Once cooled, ice with chocolate icing. Allow to set before cutting into chunks.
To make the icing, combine icing sugar, cocoa and water together in a small bowl.
I think thats a very early Aussie recipe!
