These choc chip cookies are the best. They are chewy and crunchy at the same time. Once I start snacking on them I can’t stop. Warm milk, cookies, a place to relax, what could be better? They are really sweet though, I normally don’t put in as much sugar as required. These are a treat that the whole family will enjoy.
Ingredients
- 1/2 cup (100g) granulated sugar
- 3/4 cup (160g) brown sugar
- 115g unsalted butter, melted
- 1 egg
- 1 teaspoon vanilla
- 1 1/4 cups (155g) plain flour
- 1/2 teaspoon bicarb soda
- 110g milk or dark choc chips
Method
In a large bowl, whisk together sugars and butter until a paste forms with on lumps.
Whisk in egg and vanilla, beating until light ribbons fall.
Sift in flour and bicarb. Add choc chips and fold with a spatula. Chill dough for 10 minutes.
Preheat oven to 180°c. Line a baking tray.
Spoon mixture onto tray, lightly rolling into balls before pressing them slightly down. Leave a 3cm gap between the cookies.
Bake for 12-15 minutes or until the edges have started to lightly brown. Don’t over cook them though because the cookies should be chewy.
Cool cookies on a wire wrack before eating.
