This chewy slice is soo good. The chocolate and coconut pair so well together. It’s sweet but not overpowering. I don’t always make it with the icing just because it tastes just as good without it. Love this xx

Ingredients
- 125g unsalted butter, melted
- 1 cup (200g) brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup (75g) plain flour
- 1/4 cup (35g) self-raising flour
- 2 tablespoons cocoa powder
- 1/2 cup (40g) desiccated coconut
Chocolate Icing
- 1 cup (160g) icing sugar
- 2 tablespoons cocoa powder
- 2 teaspoons butter
- 1 tablespoon hot water
Method
Preheat oven to 180°C/160°C fan-forced. Grease a 19cm x 29cm slice pan and line with baking paper, extending paper 2cm over long sides.
In a medium bowl, combine butter, sugar, egg and extract. Stir in sifted flours and cocoa then desiccated coconut. Spread mixture over base of pan.
Bake about 25 minutes or until firm.
Meanwhile, make chocolate icing.
Spread hot slice with icing; sprinkle with shredded coconut, cool. Cut into squares.

Sift icing sugar and cocoa into small bowl; add butter and the water, stir until smooth.
